Widely diffused at the time of the ancient Romans both in Lazio and in Sardinia because of the multitude of wild sheep, it was an indispensable part of the daily ration of the legionaries for its gifts of conservation, high digestibility and nutritional properties. The daily quantity for each legionnaire was 27 grams. It has solid structure and small eyes, white or straw-yellow in colour. When fresh the flavour is aromatic and slightly spicy, while seasoning becomes more intensely spicy. The matured Pecorino Romano is an excellent alternative to Parmesan on pasta.
